The water tank allows cold water to be added to the hot water tank before brewing begins, and the water temperature is raised to the required brewing temperature through the steam heating system. After the mash is boiled, it is exchanged with cooling water through a heat exchanger, which quickly reduces the mash temperature to a range suitable for fermentation.
