How to make wine and cider
For fruit wine and cider, the process is different and varies from recipe to recipe, but generally, you don’t need to worry about any steps before the fermenter. Use boiling water to avoid infection.
While this process is simpler, you’ll often need to transfer the drink from the accumulated sediment to a second glass bottle or fermenter, so keep that in mind as you prepare. Sparkling wine requires a pressure-resistant bottle like beer, but in the case of still wine or cider, you can use old wine bottles as long as you can seal them. Maturation times are usually at least four months for cider and 12 months for fruit wine.

- Steep Grains. Fills your 5-gallon brewing jug with 2.5 gallons of water. While the water is heating, soak the grains for 20 minutes, or until the water reaches 170 degrees. Allow water to drip from the grain bag into the pitcher as you remove the grain. Don’t squeeze your grain bag, as you don’t want to extract the tannins, which could add unwanted flavors to your beer.
- Bring a kettle to a boil. remove it from heat and add malt extract. Once the extract has dissolved, return to a boil. The hops will now be added at different intervals.
- You now have wort. Cool the wort ASAP.
fermentation
- Pour the cooled wort into the fermenter. Some brewing kettles even have a valve that allows for easy transport of the kettle from the kettle to the fermenter.
- Add water to bring up to 5 gallons.
- Sprinkle the wort in the container to aerate the wort. Yeast needs oxygen and splashing the wort will help.
- Add yeast. Dried yeast is the easiest since it requires no prep. Sterilize the yeast bag + with scissors, cut off a corner of the yeast bag, and pour the yeast into the fermentation tank.
- Seal the fermentation tank, add a fermentation airlock, and store it in a cool place away from light. Beer should be kept at 68 degrees for proper fermentation.
bottling
- Wash everything: bottles, filler, caps, bottling barrels, and any used delivery hoses. Use a bottle brush on the bottle.
- Boil sugar in 16 oz of water. After cooling, add directly to bottling barrels.
- Transfer your beer. The beer is sucked from the fermenters and placed into bottling barrels. Leave as much sediment in the fermenter as possible.
- Fill the bottle. Connect the filling bottle to the hose and connect the hose to the bottling bucket tap. Open the tap of the bottling barrel and push the filling machine to the bottom of the bottle.
- Cover the bottle with the cap and cap.
- Store the bottle at room temperature for about two weeks. This gives your beer time to carbonate.
